Chocolate Chip Almond Butter Cookies {Paleo} are a favored request of my family. Sometimes it’s a challenge, to say the least, to find a recipe the kids really enjoy when traditional ingredients like eggs, wheat, and dairy can’t be used. This is especially true when you’re hungry for a tasty and satisfying cookie that doesn’t fall apart, is chewy on the inside and crunchy on the outside, with an appealing look as well. Chocolate Chip Almond Butter Cookies are all of those things, containing no gluten, eggs or dairy. Also, perhaps most important of all, the “mother in me” really appreciates the dense nutrition these cookies afford that fuels my children with energy for the day.
I like to change up the sugar content of most recipes. My family has gotten used to things that are naturally sweet, so they don’t miss all the syrupy high-sugar foods. My Chocolate Chip Almond Butter Cookies are no exception. The original recipe called for a cup and a half of sugar. I use 1/2 cup of Sucanat—a raw cane sugar. Then, 1/3 cup coconut sugar because it has a lower glycemic index. I finish off for sweetness with 3 shakes of stevia, which is a natural sweetener. Refined sugar has a very negative effect on the body and its organs. It is detrimental to immune system function, causes obesity, feeds cancer and disrupts the body’s metabolic function. Dr. Mercola states that sugar is toxic, addicting, and deadly.
Today, our son Adam, an 18-year-old college student, was hungry for Chocolate Chip Almond Butter Cookies, and so he expressed his interest in wanting to bake them. I decided to lend a helping hand. I loved it! I’m happiest when my family is around and we have a chance to hang out and create good food together. Since I needed to harvest raspberries, squash, and peppers from the garden, he finished baking them by himself. He determined that the second bar pan needed some extra baking time, so he turned off the oven and left them in the heat for an additional 10 minutes. This resulted in cookies with more crunch, but we all loved the variety. I’m so grateful to Adam because, after baking, he assisted me in the photo session. He has an amazing camera that his Godmother passed down to him and he is quite proficient using it.

Chocolate Chip Almond Butter Cookies {Paleo}
Ingredients
- 6 Tbsp warm water
- 2 Tbsp ground flax seed equal to 2 eggs
- 2 cups almond butter
- 2 tsp sea salt
- 2 tsp baking soda
- 1/2 cup sucanat
- 1/3 cup coconut sugar
- 3 shakes stevia
- 1 cup semi-sweet mini chocolate chips gluten, dairy and soy free
Instructions

Preheat oven to 375 degrees.

Combine warm water with ground flax seed to make your "eggs". Let sit while you measure out the almond butter to thicken.

Add all ingredients to the mixer and mix well. You may need to stir the chips into the dough since they sometimes sit on the bottom of the bowl.

Drop by medium size scoop onto a stone bar pan or well greased cookie sheet. Bake for 12- 15 minutes.
