I know what you are probably thinking …. umm … Rashele, “You are not a Vegan.” Hang in there with me for a minute and let me explain:
You see, this Chocolate Pudding Recipe is the most intensely rich, smooth & creamy Paleo friendly pudding I have ever tasted. And sure, you can make it with egg yolks instead of arrowroot powder but we (as in our family) will be completely out of eggs for about 4-6 weeks this winter.
Say what?!? Yep. No eggs for 4-6 weeks.
We get our eggs from a local farmer. When it’s the dead of winter the chickens don’t get enough sunlight and stop laying eggs (which is probably a much-needed break for the chickens). And thanks to this Chocolate Pudding Recipe, we’ll be enjoying a chocolatey treat all winter and not missing the eggs one bit!
This Chocolate Pudding Recipe is an absolute favorite for Avah, our 3-year-old daughter and her younger sister Adalynn (15 months). The best part of serving it (despite the satisfaction of nutrient density) is the squeal of delight that comes from the youngest. It’s a rather loud squeal since this young lady has the loudest, and I mean LOUDEST and highest pitched set of pipes on her. This is, of course, followed by about 3 1/2 minutes of complete silence as she scoops and licks every last drop out of her bowl.
Here in eastern Washington, the sun is a bit scarce right now, which means I am ensuring our kids have the necessary Vitamins & Supplements for Children and that my food photography is at the mercy of whenever the sun decides to peek out for a minute or two.

There is a phenomenon when holding a camera and intently looking through it that you just don’t see little hands sneaking up on you …
And since trying to get a fistful got her in trouble with Mom, she then went and got herself a spoon (which is pretty smart for a 15-month-old):
You can bet those girls devoured this pudding the minute I was done photographing it! And as a health-conscious mother, I didn’t mind giving it to them as their afternoon snack.
What makes this Chocolate Pudding Recipe nutrient dense?
- Full fat coconut milk & coconut cream (non-BPA cans, no guar gum, great prices at Trader Joes)
- Raw cacao (instead of cocoa)
- Naturally sweetened with organic maple syrup
- Thickened with arrowroot powder instead of cornstarch (Paleo friendly & non-GMO)
- Bitter 70% cocoa organic chocolate chips (I purchase from Azure Standard for $5/lb)
- Real vanilla extract (no artificial flavors)

Ingredients
- 1 can coconut milk 14.5 oz, no gaur gum, divided
- 1 can coconut cream 14.5 oz, no gaur gum
- 1/4 cup raw cacao powder
- 1/3 cup maple syrup
- 2/3 cup dark chocolate chips 70% bitter
- 2 Tbsp raw cacao butter optional
- 1 tsp vanilla extract
- 1 pinch Himalayan salt
- 4 Tbsp arrowroot powder or 4 egg yolks
Instructions

Whisk arrowroot powder with 1/4 cup coconut milk. Set aside.

Put remaining coconut milk, coconut cream, cacao powder, cacao butter & maple syrup into medium saucepan and whisk to combine over medium heat.

Bring to boil, stirring constantly. Reduce heat to low.

Add chocolate chips, vanilla, salt, and arrowroot mixture. Whisk vigorously to combine.

To get an ultra smooth texture it is very important to ensure that the chocolate chips are completely melted.

Optional: blend with an immersion blender or transfer to high powered blender & blend on high for 1 minute.

Transfer to quart sized mason jar & refrigerate x 6 hours before serving. Transferring to small serving dishes will result in a shorter refrigeration time.

VitaMix: While totally optional, I used this high powered blender to make this Chocolate Pudding Recipe extra smooth for several months before deciding that an immersion blender would be super handy (no transferring of hot liquids in to the blender!). Absolutely love my VitaMix but the immersion blender is very handy & much less expensive if you don’t own a VitaMix.
