Curry Meatballs: Three powerful savory flavors are packed into these meatballs: curry, garlic, & green onion. Delicious plain as an appetizer or served over noodles and drizzled in tzatziki sauce for dinner. They are easy to make; just mix ingredients, scoop into balls, and bake for 20 minutes.
This recipe was given to me by my close friend, Lisa, last year and it has been a menu staple in our house ever since. Her recipe calls for lamb but beef from a grass-fed cow is a great substitute if you can’t find or don’t have ground lamb on hand.
When I make these Curry Meatballs I double the batch and freeze half of it for later. To do this simply line a cookie sheet with wax paper or parchment paper, drop meatballs onto the lined cookie sheet, freeze 2 hours, and then place the Curry Meatballs into gallon sized freezer bags. When I make freezer meals to prepare for the arrival of babies I like to double sack the meatballs (one regular gallon plastic bag + one freezer gallon plastic bag) so that they keep easily for months without freezer burn. If you own a food saver that does vacuum sealing I imagine this would be a perfect use for it!
This recipe post is going to be a little out of character … I want all you Mom’s (& Dad’s!) to know that I am struggling just like you are. Any amount of cooking while simultaneously caring for little ones is difficult, and so as a tribute to parents cooking real food and dedicated to my dear friend whom has her own little ones interrupting her every 0.33 seconds …. this is exactly what it was like for me to prepare this meal last week (keep in mind this meal should only take 40 minutes from start to finish including cook time):
- 10 month old (Adalynn) already clingy: placed her in high chair next to me in the kitchen. Singing songs to her.
- Opened ground beef, put into bowl.
- 2 1/2 year old (Avah): getting into baby bottles, threw bottle, discipline/teaching moment.
- Put spices in with beef.
- Toddler has melt down because she must have her purple halloween pumpkin now. Handled that. Now she’s coloring.
- Adalynn is fussing again; gave her zucchini, guacamole, and water.
- Mince garlic, throw in green onions (already chopped out of freezer), and an egg. Mix.
- Avah’s hungry. She has been a bottomless pit for two days despite eating all her meals. Get yogurt out and send her out on the back porch (in view) to eat it.
- Scoop and plop meatballs onto stone pan, put in oven to bake, & set the timer.
- Change Adalynn’s poopy diaper, put her at my feet in the kitchen, give her a metal bowl and whisk to play with.
- Start making zucchini noodles.
- Avah is done with her yogurt, needs cleaned up, and is asking me to please come see the “monsters” and “feed them.” I fed the monsters with her for a few minutes.
- Avah has now asked me ten questions in the span of about 2 minutes. She does not want to color. She does not want to paint. She does not want to help me cook. Informed her that “Mom has to cook dinner for Dad. Please entertain yourself while I finish.”
- Finish zucchini noodles and set aside to heat in frying pan right before serving.
- Avah is now taking Adalynn’s bowl and whisk. Discipline/teaching moment. Get 2nd bowl and whisk out for Avah and now both of them are “cooking” at my feet.
- Start making tzatziki sauce & realize my cumbers are moldy (able to salvage enough for dinner).
- Adalynn is bored of the bowls. Used empty yogurt container to make a “treasure box” for her and put random non-choking size things in there for her. Avah then takes Adalynn’s new toy. More discipline/teaching for the toddler.
- Finish tzatziki sauce. Start on dishes.
- Adalynn is now holding onto my legs; she must still be hungry. Growth spurt? Must stop and nurse the baby!
- Time to clean up the house real quick before my husband gets home.
- Avah needs to potty and she wants me to read her a book. My husband gets home while we are reading in the bathroom.
- Meatballs timer goes off, put zucchini noodles in pan to heat. Get waters for everyone and dish the kids up.
And now, because of this blog, because I really want to share our crazy, healthy, totally worth the effort — food with all of you, I am also photographing dinner before we sit down. Right now my husband literally keeps the kids in the living room so that no small fingers or toes make it into the camera frame as I get on the floor and photograph the food on my plate in natural lighting. Someday when I have more time learn more my pictures might get more interesting! No promises anytime soon.

Curry Meatballs (Lamb or Beef)
Ingredients
Meatballs
- 1 large egg or substitute gelatin egg (see blog post)
- 1 1/2 pounds ground beef or lamb
- 6 medium green onions chopped. If organic, wash only. Peel non-organic carrots.
- 8 cloves garlic minced
- 1-2 Tbsp curry powder
- 2 tsp cumin powder
- 1/2 tsp red chili pepper flakes
- 1 tsp Celtic sea salt
- 1/2 tsp black pepper ground
Zucchini Noodles
- 6 medium zucchini squash
- 1-2 Tbsp avocado oil or coconut oil, lard, tallow
- 1/2 tsp Celtic sea salt
Instructions
Meatballs

Preheat oven to 400 degrees Farenheight. Mix all ingredients in large bowl until well combined.

Form into meatballs. Place on oiled baking sheet or seasoned stone pan.

Bake 20-25 minutes until golden brown and no longer pink in the middle. Remove from oven, rest 5 minutes, serve.
Zucchini Noodles

Place paper towel over a clean plate. Spiralize zucchini and place the noodles on plate that is covered in paper towel.

Sprinkle with salt. Let sit 5-10 minutes. Use paper towel like a cheese cloth to remove excess water from zucchini.

Heat oil in frying pan, add in zucchini noodles and toss gently for 2-3 minutes. Serve immediately.

Hello do you freeze them raw or cooked?
Hi Tomi,
Good question! I like to freeze them raw. The best way is to put wax paper on a large metal baking sheet and space the meatballs out on the pan and freeze them for several hours and then transfer them into a gallon ziplock once they are frozen. Alternatively — if you are in a hurry (and I usually am!) you can just make the meatballs and put them carefully side by side in the gallon ziplock and then freeze them with the zip lock lying flat in the freezer. When ready to use just thaw and then bake as usual.
