I love to have a special treat for the kids, but I also want them to feel good after enjoying it. These Dark Chocolate Coconut Candies are the perfect ticket. Paleo friendly, no refined sugars, no dairy and no soy make these the perfect Holiday sweet.
Over the years, I’ve had a few disappointing chocolate failures when making candy, such as “seizing.” However, I’ve done some research (wisdom in my old age? Yes, but not old!) and found out how to avoid that problem. First, you need to gently melt the coconut oil by using a double boiler on med-low heat. I like to put all the coconut oil in the pan and melt about 2/3 of it before turning the heat to low and letting the remaining solid oil melt while I gently stir the warmed mixture. Next, add honey and stir well. Note that the temperature of the oil and honey must not rise above 113°F. By the way, the best way to measure out coconut oil and honey is by using the Measure-All Cup. Next, carefully set the pan on a hot pad to incorporate the raw cacao powder (Be sure NOT to get even one drop of water inside the pan! This will seize the chocolate, causing the fats to separate off and the solids to stick together). Last, I stir in unsweetened shredded coconut.
I love silicone candy molds because you can easily push out your hardened creations. I use a small scoop to pour the dark chocolate coconut mixture into each mold, supported on a cutting board, and then place the candy and molds in the freezer to harden. In half the batch, I’ll put a half of a pecan in the bottom of the mold to add variety and a nutty crunch. After hardening, dump them into a container and store in either the freezer or the fridge. Frozen or simply refrigerated, either way, they taste great!

Dark Chocolate Coconut Candy

Ingredients
- 1 1/2 cups coconut oil organic virgin
- 9 Tbsp raw honey
- 1 1/2 cups raw cacao powder OR cocoa OR carob
- 1 1/2 tsp Vanilla extract pure organic
- 3/4 cup shredded coconut unsweetened
- 48 halves pecans optional
Instructions

Gently melt the coconut oil in a double boiler over med-low heat, until 2/3rd's melted. Decrease heat to low setting and stir to melt the remming solid oil. Add the honey and stir. Keep the temperature of the mixture below 113°F.

Remove the double boiler from heat source. *(Be careful not to get any water in the pan.) Add the cacao powder, vanilla and shredded coconut, stirring to combine the mixture until well blended.

Place a pecan half in the bottom of each mold. - optional

With the small scoop, fill the silicone candy molds. Place them in the freezer for about an hour to harden. Pop them out and store in an air tight container. They will be good for a few weeks in the fridge or in the freezer for months. Enjoy directly from either place.
