Did you know there are many benefits from eating dark chocolate daily? First I want to say, “Thank you Lord, for such an outstanding treat!” I often look forward to enjoying the antioxidant benefits of what I call my “candy vitamin.” With each tasty bite, I’m reminded of improved brain function, heart health and added protection against disease.
I prefer to use raw cacao powder because it is the purest form of chocolate with the most nutritional benefits still intact. My family certainly didn’t complain when I made the switch from traditional, high-heat processed cocoa-powder to the cold-pressed, raw cacao version. The rich Dark Chocolate Candy is amazing to the palate. YUM!! It’s REALLY hard to eat just one!
My niece’s four young boys aren’t much for coconut, so she adapted an earlier recipe to add in their favorite: peanut butter. It was a complete hit at her house and at ours too! I always start with organic peanuts and grind them for my Nut Butter. This is important because non-organic peanuts are sprayed with health-stressing chemicals to kill fungus. Our boys have all reacted to these chemicals found in non-organic nuts. For that reason, we consumed only pecans for a number of years, which they tolerated well. What a blessing to find it’s not the food itself that’s the problem, but the chemicals used during processing it! Once these were eliminated by purchasing uncontaminated products, my sons could once again enjoy the unique, satisfying taste of peanuts.

- 1 1/4 cup coconut oil organic virgin
- 9 Tbsp raw honey
- 1 1/2 cups raw cacao powder OR cocoa or carob
- 1 1/2 tsp vanilla extract pure organic
- 2/3 cup peanut butter organic
Instructions
Gently melt the coconut oil in a double boiler over med-low heat, until 2/3rd's melted. Decrease heat to low setting and stir to melt the remming solid oil. Add the honey and stir. Keep the temperature of the mixture below 113°F.
Remove the double boiler from heat source. *(Be careful not to get any water in the pan.) Add the cacao powder, vanilla and peanut butter, stirring to combine the mixture until well blended.
With the small scoop, fill the silicone candy molds. Stir the chocolate mixture each time, so the peanut butter doesn't settle to the bottom. Place them in the freezer for about an hour to harden. Pop them out and store in an air tight container. They will be good for a few weeks in the fridge or in the freezer for months. Enjoy directly from either place.
