Easy Crockpot Steel-Cut Oats {Coconut & Banana} is a family favorite. This hot cereal is a nice change from our usual Quinoa Pudding and I love waking up to the smell of good hot food when the weather is chilly outdoors. Doubling the batch saves breakfast-cooking time the following week, and the cereal tastes good either cold or warm. You may want to freeze it in single-serving ziplock baggies for variety each morning.
Easy Crockpot Steel-Cut Oats {Coconut & Banana} is a great breakfast when you have houseguests, affording those wonderful laid-back morning conversations over food and coffee. It’s a nutritious meal that can be quickly served up while not interrupting the ebb and flow of conversation. This is often on our menu when my granddaughters come to visit. Rashele’s newest recipe, Healthy Baked Mostaccioli, will also be on the menu since it’s easy to prepare and provides plenty of food for a large family gathering—which is sure to happen when these cute grandaughters arrive with their mom and dad.
This recipe can be doubled in a 6 quart or larger crockpot. Be sure to grease the sides of the pot so you can enjoy the yummy crusted edges. I like to use coconut oil on a silicone brush because the recipe cooks below 300 F, which won’t damage or alter the nutritious value of the fat. This method is far healthier than cooking sprays and the health danger posed by rancid oils. A small FYI: I keep one silicone brush for oils hanging in the cupboard with a small rectangular container under it to catch drips. It’s always ready to use and only needs washing if it becomes laden with crumbs or food from the cooking pan. I got this time-saving tip from my mother.

Easy Crockpot Steel-Cut Oats {Coconut & Banana} are wonderful to wake up to. No sugar added, but plenty sweet and full of hearty flavor to start the day.
Ingredients
- 2 medium bananas ripe & sliced
- 1 can coconut milk full fat
- 1 1/4 cup filtered water
- 1 Tbsp apple cider vinegar
- 1 tsp vanilla extract
- 2 Tbsp coconut oil broken into pieces OR grass fed butter
- 1 cup steel cut oats gluten free
- 1 Tbsp flax seed ground
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp sea salt
Instructions

Brush inside of 3 1/2 quart crockpot with Cocount oil. Add all ingredients, stir, cover and cook for 7 hours.

Serve steel cut oats in a bowl with optional toppings. Stores in fridge for one week or freeze for a later date.

Reheat by adding water or milk to a sauce pan with oats added and heat on medium for just a couple minutes.

Recipe can be doubled, but add one hour cooking time. Must use a 6 quart crockpot or larger.

Optional Toppings: toasted coconut, sliced bananas, fresh or frozen berries or other fruit, chopped nuts, maple syrup or honey, yogurt and/or milk.
