Bone broth is all the craze right now and for good reason: it is high in protein and contains glycine, proline, chondroitin sulfate, glucosamine, collagen, glycine, and glutamine. (1) (2)
So what does that mean? This Fast Chicken Bone Broth is going to:
- Provide nourishment & protein

Bone broth is a staple in our house, however, my problem with bone broth for the past several years is that it takes so much time to make. There is roasting the bones, simmering, straining, skimming, freezing …. and my crockpot or stovetop was on for 8-24 hours at a time.
That problem is now solved with this Fast Chicken Bone Broth. Just 90 minutes in your Instant Pot (pressure cooker) and you are done! The result is perfect gelatinous bone broth every single time.
So here is my little secret: I use chicken feet. Yes, you heard me right, chicken feet! Don’t hit the back button on your browser, hang in with me for a bit 🙂
Chicken feet are inexpensive (<$2/pound), easy to find, and convenient. Just throw them in water with a few spices & an onion. When you are done pressure cooking, strain the feet out and enjoy perfect bone broth. Save those feet to make a second batch of broth before tossing them!
Where does one buy chicken feet?
- Check your local health food store (two of the stores near me carry them)
- Network at farmer’s markets & find someone local
- Browse Eat Wild to source a farmer in your area
- Join your local Weston A. Price Foundation chapter & ask for resources
- Sometimes chicken feet (or the joints of large animals) are referred to as “dog bones” or “dog treats” (lucky dog!)
But Rashele, chicken feet are gross!! I am not going to make this recipe!
This was literally the reaction of my very best friend when I was telling her about this recipe. She went from excited to make it to completely & totally disgusted. Here is the good news: you can use leftover chicken bones instead. Just save that chicken carcass when you roast/slow cook a whole chicken and start saving the bones from drums & wings as well A variety of bones/joints is needed to get a lot of gelatin in your bone broth.
What if you don’t have an Instant Pot (pressure cooker)?
It won’t be as fast but you can make chicken bone broth on the stove in a stockpot or in a slow cooker. Simmer time for these methods varies, but generally, 8-12 hours will give a nice gelatinous broth.
How to use chicken bone broth:
- As a base for soups (e.g. Poultry Bone Broth Soup)
- In place of stock/broth in recipes
- Drink warmed like tea with a little salt added (especially if you are sick)
- Give it to your kids to drink (who knows – they might love it!)

How to store bone broth:
- In the fridge for up to 7 days
- In the freezer for up to 6 months
- Freezer tips:
- Try freezing in pint glass jars (leave enough room at the top to allow for expansion)
- Cool and then pour into ice cube trays. Once frozen transfer to gallon zip-lock bags
- There is ~1 ounce or 2 Tablespoon of bone broth per ice cube
- If you forget about the bone broth and it goes past the recommended time frame for storage, just be sure to boil it for 10-15 minutes before consuming (especially if you let it sit in the fridge for too long!)

Fast Chicken Bone Broth
Ingredients
- 2 pounds chicken feet
- 12 cups filtered water
- 1/4 cup apple cider vinegar
- 1 tsp black pepper ground
- 1 tsp Celtic sea salt
- 1 large onion optional
- 1 Tbsp parsley, dried optional
- 2 tsp basil optional
Instructions

Put all ingredients in 6 or 8 quart Instant Pot (or similar pressure cooker). Use manual settings to set to high pressure for 90 minutes.

Once done, release pressure per manufacturers instructions. Let cool until safe to handle and then strain into pint jars through a fine mesh sieve.

Store in the fridge for up to 7 days or the freezer for 6 months.
