There are so many hearty vegetables in this meal, you can take or leave the rice (Paleo option). I love to put in a bunch of kale right at the end (cooking it just enough that it begins to turn a bright green color) and aim to include some squash (e.g. zucchini or summer squash) and root vegetables (e.g. carrots, parsnips, rutabaga) which are excellent prebiotics. Prebiotics are the stuff that feed the probiotics, or good bacteria, in your gut.
Gone are the days of my toddler napping and so little sister frequently gets woken up early. My only choice is to incorporate my children into whatever I am doing at the moment. I actually believe this is really good for them and from a young age have taken them to all my appointments (even the dentist and eye doctor), on errands, and other miscellaneous outings. It hasn’t always gone smoothly, but I am so glad I persevered; I now have two children that I can take almost anywhere with me.
My youngest, Adalynn, is 17 months now and is rightfully getting her little paws on these delicious grass-fed Jalopeno Chedder Bratwurst from a company we love called Teton Waters Ranch. These sausages, which are uncured and nitrate free, are nothing short of AMAZING! What is not pictured: the hole Adalynn succeeded in biting through the plastic (talk about Mom fail) since she was determined to get herself a little bratwurst snack. I find these sausages at my local grocery store, health food stores, and even Costco.

I would suggest that only one pan is needed for this easy Jambalaya Recipe. Simply sauté the onion & garlic, add the rest of the veggies (except save the kale for the very end), toss in the sausage, and finally add the kale just a few minutes before pulling it off the heat.
If you plan to eat this with rice then you can still do the one pot dinner method by simply adding your chicken broth and rice to the pot of veggies and sausage. Stir occasionally to make sure the rice doesn’t stick to the bottom and just watch for the liquid to get soaked up and rice to become tender. Again — kale at the very end to preserve the nutrients!
What makes this Easy Jambalaya Recipe {Kale, Sausage} nutrient dense?

Easy Jambalaya Recipe {Kale, Sausage}
This Jambalaya Recipe is packed full of veggies and spicy jalapeño cheddar grass-fed beef sausage. An easy weeknight meal that you can make in one-pot for a fast cleanup.
Ingredients
- 1 Tbsp avocado oil
- 12 ounces Teton Water's Ranch Grass-fed Jalapeño Cheddar Bratwurst
- 1 small red onion
- 2 cloves minced garlic
- 2 medium zucchini or summer squash
- 2 medium carrots
- 2 medium parsnips or rutabaga
- 1 large head of kale
- 1 medium jalapeno
- 2 tsp cajun seasoning optional
- 3/4 cup organic brown rice optional
- 1 3/4 cup chicken bone broth or regular chicken broth
Instructions

Dice vegetables. Heat large stockpot over medium heat with 1-2 Tbsp of avocado oil, tallow, butter, or refined coconut oil in the bottom.

Add onion and garlic to stockpot and cook until translucent and fragrant. Add vegetables & jalapeño to stockpot and stir frequently until sautéed and tender.

Meanwhile, cut sausage into thin circle slices. Add to stockpot. Add optional cajun seasoning.

If using rice, add chicken bone broth to stockpot. Bring to boil, add rice. Stir occasionally to prevent rice from sticking to the bottom of the pan until the liquid is absorbed and rice is tender.

Lastly, chop the kale. Add it to the stockpot just a few minutes before pulling off the heat. Cook just enough for the kale to turn a bright green color so as to preserve the nutrients.
