Copycat Mint Chocolate Truffle Larabar Bites

These Mint Chocolate Truffle Bites were meant to be a copycat for the Larabar Bites my kids love, but I dare say, they are even better tasting and way easier on the budget! Sweetened with dates, collagen added for extra protein, and a touch of dark chocolate.   

My sixteen month old daughter is just the sweetest little girl right now … and she is also a little small for her age. Not too worried about it yet, but I definitely want to give her even more nutrient dense foods. And so, this past week I went on a mission to have some new dense (fat filled, naturally sweetened, added protein) snacks around the house for her. These Copycat Mint Chocolate Truffle Larabar Bites were a product of this mama on a mission!

I made them for the first time last Thursday. Both of my kids were standing on step stools crowded around the food processor awaiting their treat to be done. I knew it was going to be a huge hit when all three of us (myself included) began eating it right out of the food processor container. After putting the kids down for a nap I quickly made a second batch and photographed it for you; this is a must make recipe for the holidays!

Maybe you are figuring out that I am on a collagen/gelatin kick here, but seriously, this stuff is amazing. Now that I am using the Vital Proteins brand (zero taste) it is easy to put it in everything for the added nutrition and protein. These CopyCat Mint Chocolate Truffle Larabar Bites are made with just eight real food ingredients and come together from start to finish in about 15 minutes.

You can use whatever kind of nuts you would like (Larabar usually uses almonds). I chose to use a combination of almonds, walnuts, and pecans which turned out fabulous. I also made sure to grind them into very tiny pieces in the food processor since my youngest only has a few teeth.

As you are grinding all the ingredients together in the food processor the mixture will start to get “lumpy” and stick together. This is a good sign. If you have been processing for several minutes and this is not happening then try adding one tablespoon of water.

Ingredients

  • 10 large Medjool dates pitted
  • 1/2 cup raw almonds see notes
  • 1/2 cup raw walnuts
  • 1/2 cup raw pecans
  • 1 cup dark chocolate 70% or greater
  • 1/4 cup raw cacao
  • 2 Tbsp coconut flour
  • 2 Tbsp Vital Proteins Collagen Peptides
  • 2-3 Tbsp filtered water
  • 1/2 tsp peppermint extract

Instructions

  1. Put all ingredients in a large food processor. 

  2. Mix continuously until nuts are chopped fine & the mixture begins to clump. 

  3. It is ready to form into balls when the mixture easily compacts and holds together. This usually takes 3-4 minutes of continuous mixing in the food processor. 

  4. Use the Small Scoop (easy & fast) or simply scoop with a spoon and form into balls. 

  5. Enjoy immediately! Store in the fridge. 

Recipe Notes

  1. You may use whatever combination of nuts that you would like so long as the total amount equals 1 1/2 cups. 
  2. Vegan option: use 1/4 cup coconut flour and omit collagen peptides.
