My sister-in-law couldn’t believe it when I visited her in September 2017 and I was 8+ years into cooking for a family WITHOUT an immersion blender. She informed me there were inexpensive and super handy.
She was absolutely right. I just purchased mine about a month ago and love using it to make my Chocolate Pudding {Vegan, Coconut Milk} super creamy, to make guacamole for the kids every day, blending squash soups (e.g. butternut) without having to transfer them to a blender, & my ultimate favorite using it for Instant Pot Whipped Potatoes (coming soon!) & Sweet Potato Casserole.
For for the whipped potatoes & sweet potato casserole I simply cook the potatoes in my pressure cooker (e.g. Instant Pot) and then I use the immersion blender to whip them right in the pot. No extra dishes and super fast!
