Slow Cooked Beef & Broccoli: There is nothing I enjoy more at the end of a long day than dinner practically fixing itself. This slow cooked beef and broccoli is a perfect go-to meal and makes great leftovers for tomorrow’s lunch.
The meat is tender, falling apart in your mouth and soft enough for little ones to eat with ease. The broccoli is freshly sautéed right before eating; it is cooked just enough to make it easy to digest without loosing important nutrients. We like to eat this Slow Cooked Beef & Broccoli over spouted rice or quinoa but this meal is satisfying without grains which makes it Paleo, GAPS, & AIP friendly.
I love to throw this meal in the slow cooker on days that our evenings are especially busy (gymnastics, church events) and during the winter months it is great to come home to this after a day on the slopes or sledding with the kids.
The best cut of meat for this Slow Cooked Beef & Broccoli is a chuck roast because it contains significantly more fat throughout the meat than some other roasts (e.g. rump, shoulder) which will make it more tender. If you are in a real pinch for time (I have been there on several occasions) this recipe still works if you just throw the whole roast in and shred it at the end of the day about 30 minutes before dinner. Its not quite as good but its food and sometimes that is all we care about at the end of a long day!

Slow Cooked Beef & Broccoli
Ingredients
Meat in Slow Cooker
- 2 Tbsp toasted sesame oil *use avocado oil for GAPS & AIP
- 1 4-5 lb beef chuck roast trimmed & sliced into bite size pieces
- 2 cups beef broth beef BONE broth preferred
- 1/2 cups coconut aminos or soy sauce
- 1/8 cup coconut sugar *use honey for GAPS & AIP
- 3 cloves garlic minced
- to taste salt & pepper *omit pepper for AIP
Sautéed Broccoli
- 8 cups broccoli about 4 heads/stalks or 8 heads (using florets only)
- 1 1/2 tsp Himalayan salt celtic salt or sea salt may be substituted
- 2 Tbsp avocado oil or substitute butter, ghee, coconut oil, lard, or tallow
Instructions
Meat

Coat bottom of slow cooker with sesame oil.

Trim & slice roast into bite size pieces. Put meat into slow cooker.

Mix broth, coconut aminos, coconut sugar, and garlic, salt and pepper in bowl with whisk. Pour over meat in slow cooker.

Put lid on slow cooker, set to low, and cook for 6-8 hours.
Broccoli
-
Cut broccoli into bite size pieces.

Heat avocado oil in large saucepan over medium heat.

Add broccoli to saucepan, stir or toss frequently while adding salt.

Cook 2-3 minutes or until broccoli turns a vibrant dark green color. Remove from heat and serve hot over beef.
