Slow Cooked Beef Shanks {Garlic, Veggie, Herbs} is our family’s go-to meal because it’s simple and quick to prepare before work and ready to serve when you arrive home. It’s wonderful to walk in the door and smell the tasty aroma of Slow Cooked Beef Shanks.
When I arrive home from work, I start a saucepan heating with water for whipped potatoes. Then I use a pair of small Chef’s Tongs to fish out shank bones from the crockpot and place them on a plate. I remove all the bone marrow and trim off any cartilage or meat left on the bones, adding these nutritious essentials back into the pot. Next, stir well to break up any meat chunks and distribute evenly among the cooked vegetables.
Whipped potatoes form the base for Slow Cooked Beef Shanks. I purchase instant mashed organic potatoes from Azure Standard in a 40-pound bag. I’ve found this to be the most economical way to purchase these, which are currently running $1.87 per pound.

Ingredients
Beef Shanks
- 4 beef shanks 1 1/2 inch thick
- 1 Tbsp sea salt
- 2 tsp black pepper
- 2 cups bone broth
- 2 cups water
- 8 cloves garlic minced
- 1 zest of lemon
- 1 Tbsp thyme, dried
- 2 bay leaves
- 6 celery ribs cut into 1/2" pieces
- 6 large carrots cut into 1/2" pieces
- 1/2 lemon juiced
Instant Organic Potatoes
- 3 cups water milk or stock could be used
- 1 Tbsp parsley, dried dried
- 2 tsp granulated garlic dried
- 3 Tbsp coconut oil
- 2 cups potato flakes
Instructions

Place shanks in bottom of slow cooker pot, stacking them if need be.

Put all ingredients on top, giving a quick stir to incorporate the herbs. Cook on low for 10 hours or high for 6 hours. Serve over mashed potatoes.
Instant Organic Potatoes

Heat liquid to just below boiling. Add seasonings and oil, stir to melt. Add Potato Flakes and whisk slowly. Let stand for one minute and thicken.
