Strawberry Lime Popsicles: These popsicles are sure to be a favorite in your household. They are easy to make, full of fresh fruit, and delicious! Whole strawberries, a splash of lime juice, and just a pinch of raw organic sugar — the perfect summer treat for healthy kids.
There are times during the journey of motherhood when a woman thinks, “Wow. I am really a Mom now.” At least that has been the case for me. Sometimes this has happened during very significant moments and other times it is just a little thing that triggers the thought. Making these popsicles (oddly enough) was one of those moments when I felt like, somehow, in the last three years I have become a mother. Perhaps it is the memories of home made popsicles that I ate as a child, or perhaps it is the reason behind why I made these Strawberry Lime Popsicles for our kids.
I got the idea to make these for our girls when I searched for a organic 100% fruit popsicle (no added sugar) and could not find one. In fact, sugar was the first ingredient in most of the popsicle brands I found.
Because these are strawberry popsicles … here is a little tidbit about conventional vs. organic strawberries:
Strawberries are #1 on the list of top produce to avoid because they contain so many pesticides (as you can imagine the little pores holding the seeds trap pesticides easily). You can learn more about produce that is highest in pesticides here. The documentary that was the tipping point for us to switch to organic was called “Bought.” I believe you can still view it for free using the link I just provided. This documentary is about more than just food; we found the glyphosate information, the research being done about children having pesticides in their urine, and links between childhood allergies and genetically modified foods alarming enough to make the switch to organic.
Choosing to buy organic doesn’t always mean scarifying your budget. For these Strawberry Lime Popsicles, we were able to get our hands on nearly organic (local farm, not certified but we trust them) strawberries by picking them ourselves for ~$1.50/pound which made these popsicles a really affordable treat that the kids absolutely love. I have also noticed that Costco is carrying fresh organic strawberries for a fairly reasonable price and they have frozen organic strawberries for less than $3/pound. Another resource for organic strawberries in bulk is Azure Standard.
When you buy popsicle molds look for ones labeled “BPA free”, however, no matter what kind you buy it is best to always wash all plasticware by hand with warm soapy water. Research is emerging that alternatives to BPA may be just as toxic (source) and one way to decrease the risk of getting exposed to these toxins is to avoid the high heat cycles that most dishwashers use.

Strawberry Lime Popsicles
Ingredients
- 6 cups strawberries whole
- 1 Tbsp lime juice
- 1 Tbsp organic cane sugar optional
Instructions

Place all ingredients in blender. I find it easiest to throw whole strawberries in the blender up to about the 6 cup line (don't waste your time chopping them beforehand). Mix on medium speed until texture is smooth.

Pour into popsicle molds. Freeze minimum of 2 hours before serving.
