Easy Healthy Gluten-Free Apple Crisp

Baked Apple Crisp is a quick, yummy desert that is gluten, dairy, and egg free.  A great topping for ice cream, pancakes or waffles and is delicious on ham.

Ingredients

  • 6 large apple washed and chopped
  • 1/2 can Zevia soda Black Cherry or Dr. Zevia
  • 1/2 cup sucanat un-refined cane sugar
  • 1 Tbsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 cup thick rolled oatmeal gluten free
  • 1/2 cup coconut oil softened (or butter if you can tolerate)
  • 1/2 cup raisins
  • 1/2 cup nuts optional (pecan or walnut)

Instructions

  1. Place apples in a 10 x 6 1/2 inch baking dish.

  2. Pour Zevia over apples. Or if coming out of the freezer, break up apples with a fork as they thaw slightly.

  3. Combine next 6 ingredients; cinnamon, nutmeg, ginger, rolled oats and oil. Mixing well. Add in raisins and nuts, if using.
  4. Pour over apples.

  5. Bake, uncovered, @ 350 degrees F., for 45 minutes or until apples are tender.
