Ingredients

  • 1 can coconut milk 14.5 oz, no gaur gum, divided
  • 1 can coconut cream 14.5 oz, no gaur gum
  • 1/4 cup raw cacao powder
  • 1/3 cup maple syrup
  • 2/3 cup dark chocolate chips 70% bitter
  • 2 Tbsp raw cacao butter optional
  • 1 tsp vanilla extract
  • 1 pinch Himalayan salt
  • 4 Tbsp arrowroot powder or 4 egg yolks

Instructions

  1. Whisk arrowroot powder with 1/4 cup coconut milk. Set aside.

  2. Put remaining coconut milk, coconut cream, cacao powder, cacao butter & maple syrup into medium saucepan and whisk to combine over medium heat. 

  3. Bring to boil, stirring constantly. Reduce heat to low. 

  4. Add chocolate chips, vanilla, salt, and arrowroot mixture. Whisk vigorously to combine. 

  5. To get an ultra smooth texture it is very important to ensure that the chocolate chips are completely melted. 

  6. Optional: blend with an immersion blender or transfer to high powered blender & blend on high for 1 minute. 

  7. Transfer to quart sized mason jar & refrigerate x 6 hours before serving. Transferring to small serving dishes will result in a shorter refrigeration time.
