Healthy Pesto Chicken Pasta

This healthy Pesto Chicken Pasta is a wonderful main course or a hearty potluck side dish. Fresh basil pesto (with walnuts), penne pasta, organic chicken, & finished with ripe tomatoes.

Chicken, Tomatoes, & Pasta

  • 1 Tbsp avocado oil or refined coconut oil
  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1/2 tsp Celtic sea salt
  • 1/4 tsp black pepper fresh ground
  • 8 medium tomatoes fresh
  • 10 ounces penne pasta

Basil Pesto

  • 2 oz fresh basil
  • 1/2 cup olive oil
  • 1/2 cup walnuts
  • 1/2 cup parmesan


Chicken, Tomatoes, & Pasta

  1. Brush large skillet with oil & begin to heat over medium/low. Add diced chicken. Season the chicken with salt & pepper. 

  2. Brown chicken & cook until no longer pink. Remove from heat & set aside. 

  3. Dice tomatoes, add to chicken. 

  4. Boil pasta according to directions. Drain excess water, add to chicken & tomatoes. 

  5. Finally, add pesto. Stir to combine & serve either warm or cold. 

Basil Pesto

  1. Combine basil, walnuts, olive oil, & parmesan in blender or food processor. 

  2. Blend until well combined.
